And how the heck can you tell the liquid has been absorbed without looking?

Maybe the recipe author has glass lids for their cookware.
Even with my glass lidded pot, I still had to lift the cover to make sure the couscous was done.
Wait for the horrible smell?
You know, I've always thought About.com hired some seriously stupid people. I've read a variety of poorly written, barely thought out advice on that site. Wiki sites attain much higher quality.
